Cheese cake is one of my family's favourite desserts, everyone likes it. I recently came across lemon cheese cake. I decided to try to make my own using measurements and making them up, the cheese cake turned out like this. AMAZZING! - Lemon Jelly
- Lemon
- Condensed milk
- Philadelphia soft cheese ( low fat or fat)
- Icing sugar
- digestive biscuits
- butter
- jelly's (sweets)
- Use 5- 10 digestive biscuits depending on how thick you want the base.
- Crush them up in a bowl and then add 50g of melted butter. Mix it well together.
- Add the base into a push up bottom tray like the one in the picture. If you don't have a push up tray you can use a baking sheet or kitchen foil. Place the foil into a cake tin.
- Then get a measuring jug. Add 200ml of water into it and then add the jelly. Melt the jelly.
- Take a grater and grate the zest of the lemon. Add the zest into a clean bowl and then add the jelly.
- Get your Philadelphia soft cheese and add the full packet.
- Get 1 cup of icing sugar and add it into the mixture.
- Take a clean bowl and mix the condensed milk till smooth and thick. Then add the milk into the mixture.
- Mix everything together (not the biscuits).
- Pour the mixture on top of the biscuits, then place into the fridge to set.
- After it has set you can add your sweets.

Oh, that looks and sounds super yummy! My mother recently made a margarita cheese cake which was also really nice. You can never go wrong with cheese cake :)
